

Altar Cabernet Sauvignon 2019
Altar is a 100% Cabernet Sauvignon red from D.O.P. Pago de Otazu, with grapes hand-harvested in October. It was born in 1999 as the symbol of the winery's new winemaking era. After a double selection of bunches and berries, it is micro-vinified in new Allier French oak barrels, with cold maceration prior to fermentation and malolactic fermentation on fine lees in barrel. Eighteen months in Allier French oak and a minimum of sixty months resting in bottle in our cellar bring out all its finesse and elegance, making it the winery's icon. The hand works the earth, the earth draws the hand: through this hand, the artist Héctor Zamora evokes the deep connection between the grower and the land, the labour and dedication behind a wine faithful to its terroir. On tasting it shows a deep garnet red, a fragrant nose of scrubland and wild berries with spiced touches, and an elegant, balanced, harmonious palate with a long, enveloping finish. It pairs with oven-roasted and grilled meats, aged cheeses, nuts, Japanese cuisine, black rice, octopus and chocolate desserts.
